Tom's Apple Pie

 

2 1/2 c. flour
3/4 c. shortening

1 T. sugar
3-5 T. cold water

 

Preheat oven to 400º.  Mix flour, shortening and sugar with electric mixer until consistence of cornmeal.  Add water and mix until consistency of dough.  Break in half and refrigerate while you make filing.  Roll out each half between two pieces of wax paper.  Press one piece on bottom of 8 or 9-inch pie pan.  Add filing.  Dot with pieces of butter or margarine.  Add top.  Crimp sides and make several slashes in top.  Bake at 400º for 10 minutes.  Reduce heat to 350º for 45 minutes or until top golden brown. 

   

Filing:

 

4-5 med. Granny Smith apples
3/4 c. sugar
1 tsp. cinnamon

1/4 tsp. nutmeg
1-2 T. Cornstarch
1/4 c. golden raisins

 

Mix together sugar, spices and cornstarch.  Add to apples.  Stir in raisins.  Pour into unbaked pie crust and cover with second crust.
