4 med. sweet potatoes,
peeled & cut into 1-in.pieces
1/2 c. dried apricots, quartered
1/4 c. raisins
1 T. olive oil |
1 med. onion, finely
chopped
2 tsp. mild curry powder
1/4 tsp. salt
Black pepper to taste |

Cook sweet
potatoes in large pot with enough water to cover by 1
inch. Add salt and bring to boil over high heat.
Reduce to medium and cook uncovered until tender but not
mushy (5-8 minutes). Drain well. Meanwhile,
combine apricots, raisins and 1/2 to 3/4 cup of boiling
water. Let sit until plumped, about 8 minutes.
In large pot, heat oil over medium heat. Add onion
and cook until softened. Add curry powder and
cook, stirring until fragrant. Add cooked sweet
potatoes, apricots, raisins, and fraud soaked liquid.
Stir gently over medium-low heat until warmed through. |
